Recipe of the Month - January
'05:
Get ready for Vietnamese New Year!
Here's a recipe to enjoy with Banh Chung - a dish eaten at every
Vietnamese New Year celebration.
Pickled Carrots ( Dua Mon)
Ingredients:
5
lbs. Radish (cu cai)
2
lbs. Carrots (ca rot)
1
clove of garlic (cu toi)
2
tbsp. vinegar (giam)
2
1/3 cup sugar (duong )
2
tbsp. salt (muoi)
2
cup fish sauce (nuoc mam)* Brand 3 crabs
Instructions:
1.
Cut radish and carrots into 1 ½ inch size long.
Then
shred to french fry size, add 1/3 cup of sugar
and
2 tbsp. salt mix together and leave overnight.
Next
morning drain off all water.
2.
Cook 2 cups of sugar until melted and turned brown.
Then
add 2 cups fish sauce, and 2 tbs. of vinegar cook to
boil.
Turn off and let cool. Slice garlic and add radish and
carrots
to mixture. Leave for 2 –3 days then enjoy with
Banh
chung.
