Recipe of the Month - February '05:

How to make Banh Xeo 


Ingredients:

1  bag of Banh Xeo flour mixture
2  bowls of of water (rice bowl) about 2 cups
30 shrimps; peeled and devein
30 small slices of pork
1 pound of bean sprouts
5 eggs (mix with wisk)

Instructions:

Mix banh xeo flour with water thoroughly
 
In a med high heat add a table spoon of olive oil
Put in 2 shrimps, 2 slices of pork
Cook until done turning occasionally
Add 3/4 ladle of banh xeo mixture (Be sure to stir again before scooping up mix)
Turn skillet as you are pouring banh xeo to spread evenly in skillet.
Add a handful of bean sprouts
Put lid over skillet for about 2-3 minutes
 
optional: add egg mixture to edges of banh xeo
Add more olive oil if necessary to keep banh xeo from sticking to skillet.
 
Fold banh xeo over with spatula and slide on your plate.
Makes about 15 banh xeo
 
Eat with different herbal leaves, lettuce and cucumber.
